[Mellow] The Saka shrine worship the gods of sake brewing. This sake is a summer limited Junmai Ginjo and uses a sake rice “Saka Nishiki” to bear a name of the shrine.
In “Izumo Country Fudoki”, it is written that the gods brewed sake in the area of Saka.
The sake rice “Saka Nishiki” bear a name of the Saka shrine which is the birthplace of the sake brewing.
This Junmai Ginjo uses “Saka Nishiki” and its rice-polishing ratio is 60%.
Elegant ginjo-aroma, very mild and gentle umami of rice.
Good balance of clean umami and acid, and finished with a taste that is full-bodied.
